This is one of my all-time favorite “junk foods”. I have to put that in quotes because I believe wings are part of a balanced diet, but I love to eat so many things (food makes me so happy) that there’s a need to categorize favorites. In any case, my boyfriend makes some amazing, slightly healthier version of the classic hot buffalo wings.
There are bars around here with great wings happy hour deals – half off, 25 cent, 10 cent, all you can eat, and I’ll be honest and say I’ve tried my fair share. Despite being able to inhale them and eat every sliver of meat, skin or mmmm connective tissue off the bones, I am picky about my wings. I prefer the winglets over the mini drumstick part (don’t know the scientific anatomical terms). Can’t be too crispy and lose the juiciness of the meat; on the other hand the skin cannot be under cooked and chewy. Sauce must be spicy but not overwhelming – I don’t expect layers of flavor but it can’t just be one note either.
Anyway, this wing recipe is great – I’ll even watch football if I have these babies in front of me to munch on, and some blue cheese to dip them in!
Slightly healthier baked buffalo wings
-As many wings as you can eat (fresh or defrosted frozen ones)
-Butter (optional, the health factor goes up if you nix it but it makes the wings smell amazing)
-Sauce, I prefer Frank’s Red Hot, but I also put that on EVERYTHING
-Salt and pepper to taste

5. Spread wings on baking sheer, bake at 500 for 12-15 min, skin side up
6. Lower oven temp to 415
7. Sauce wings with franks red hot
8. Bake 20 min
9. Sauce again
10. Bake another 10-15 min
11. Optional, broil to get skin crispier!
